Recipe - Homemade Mayonnaise

By hand or in a blender, prepare your homemade mayonnaise! You can then make aioli, Andalusian sauce or tartar sauce from this mayonnaise.


  • Preparation: 15 min


  • 1 egg yolk
  • 1 tbsp of mustard
  • 25cl of olive oil
  • 1 tbsp of vinegar
  • Salt

Step 1

Separate the white from the yolk and remove the germ from the egg. Place the yolk in a round bowl.

Step 2

Add the mustard and salt. Using a whisk or a fork, whisk the mixture until smooth.

Step 3

Drizzle in the oil, mixing well between each addition.

Step 4

Finally, blanch the mixture by adding the vinegar.
