Mussels and fries are a very popular dish in Belgium and northern France, consisting of cooked mussels and served with fries. The portion of mussels is generally one kilogram per person; it is often served to each guest in the cooking vessel.

- 3L of mussels
- 5 chopped shallots
- 2 chopped garlic cloves
- ½ chopped bunch of flat-leaf parsley
- 40cl dry white wine
- 50g of butter
- Black pepper
- 1,5kg of potatoes
- 2L of frying oil
Peel potatoes. Cut them into sticks and rinse them with water. Rub them in a cloth to dry them.
Heat the oil to 160 ° C and immerse the potatoes in small quantities. Cook by stirring the basket regularly for 6min. Reassemble the basket and shake the fries over the oil. Place in a dish covered with absorbent paper.
Cook a second time. Heat the oil to 180 ° C and immerse the fries in it for 3 to 4 minutes, stirring them. Reassemble the basket and shake the fries over the oil. Place in a dish covered with absorbent paper. Sprinkle with salt.
Melt the butter in a casserole dish, brown the shallots in it. When they are translucent, add the mussels, garlic and parsley. Drizzle with white wine, add pepper and cook over high heat, stirring for 5min.
